Culinary Roots Mazatlan 2015

From October 15 to 27, the international culinary event “Culinary Roots 2015” was held in Mazatlan, Sin. by the Sinaloense Gastronomic Collective COSINAR which aims to transform the image of Sinaloa through its traditional cuisine, to preserve and value the culinary traditions and customs of our state.

The Secretary of Tourism Francisco Cordova expressed at the opening of the event that “internationally recognized Mexican cuisine from the inscription on the list of UNESCO World Heritage and in that sense the cuisine of Sinaloa is part of a subchapter of Mexican cuisine, so it is a cultural heritage of ours that we must safeguard and preserve. ”

He also stated that this event is an opportunity to promote Mazatlan and Sinaloa as a great gastronomic tourist destination.
Fourteen national and foreign chefs attended as lecturers who transmitted their knowledge and culinary experiences to a large audience, most of them gastronomy students, which will undoubtedly have a positive impact on their professional training.

The Sinaloan Gastronomic Culture Conservatory was represented by Chef Elina Benítez who gave the conference “La Cocina Tradicional Sinaloense” making a tour through our gastronomic regions and its most representative dishes. Before the audience, he prepared a delicious Sinaloan caldillo and demonstrated how a aguachile is prepared according to tradition.
The second edition of “Culinary Roots” will be in Los Mochis, without next year in the month of March, an event in which the Conservatory will talk about the State Declaration of Traditional Sinaloan Cuisine as a Cultural Heritage of the State.
